mango avo salad
This WIAW happened to have Cinco de Mayo in it so the weekend was filled with guacamole and fresh salsa. It was also a relatively busy week with work and activities for our household so a lot of these meals were quick and easy … which is probably what you’re looking for! A few of them were a little more time-consuming but with the fun weekend with friends it was nice to be able to make some special dishes to share.
Here’s what I had this past week:

Mexican food. Here I have my corn chips but I also frequently have a Mexican themed meal at least once a week. Guacamole, corn shaved off the cob, tomatoes, cilantro, and lettuce make the perfect meal in my book. Also, everyone loves Chipotle and so do I. When my hubby is craving Chipotle and I can’t lure him away from it then I cave and go, as well. I always get the same thing: salad (no dressing) with black beans, grilled veggies, tomatoes, salsa, and guac. What?! It’s not 100% raw but it’s 100% approachable and plant-based. 



Mango-Avo salad. This is a regular in my repertoire because it is low in fat, extremely delicious, easy to make, and fills me up nicely. Give it a try.

Massaged Kale Salad. It’s super simple and I’ll be posting my recipe soon. For now, try taking some fresh guacamole and massaging your kale leaves until they wilt. Toss in other veggies. I like red peppers, red onion, and tomatoes. Like a healthy version of potato salad with all the crunchy textures!

Pesto Pasta. My SO craves my pesto pasta and so whenever I make up a batch for him I use some of the pesto to toss with kelp noodles and carrot ribbons. You could also make pesto (basil, walnuts/pine nuts, garlic, virgin olive oil, sundried tomatoes) and toss with zucchini noodles, squash noodles or even just any vegetable blend you’d like. I don’t do this often but when I do I go all the way.

Strawberry Chocolate Pie with Coconut. My treat this week was this guy. I shared it with friends and then took the leftovers to work because while I love desserts I also love a good balance. And just because it’s raw doesn’t mean I can eat an entire pie by myself (though I’ve fantasized about it)
