raw vegan peach cobbler
Are you prepared for this? I’ve mentioned Fully Raw Kristina before and so it should be no surprise that I’m obsessed with her. What I have found is that she is the queen of inspiration and uses dates to sweeten anything up.
After having her cherry tart and then seeing the video at the bottom of the post I felt like I couldn’t go another minute unless I made this tart dish. I am so glad that I did.
What I have found is that the combination of dried figs and fruit has been so incredible. It is delicious and also incredibly easy to digest. I feel satisfied for hours without feeling heavy and weighed down. It’s like I’m eating something healthy and also eating dessert.
I’m having my cake and eating it too.
 
Of course I don’t like to pretend that this much sugar is just the most health-conscious approach to food … I also eat vegetables and less sweet fruit. But when I want a treat this just seems like the perfect–and easiest–way to satisfy my sweet tooth.
Fig Crust:
a recipe
1 cup dried figs
Soak the figs in warm water while you prepare the filling. Then, when they’re nice and soft, whirl them in a food processor until just broken down and sticky. Dump contents into a tart pan and press down. Place in freezer to firm up while you work on the filling.
Peach Filling:
a recipe
1/2 cup dates, soaked and pitted (peeled, optional)
2 peaches
1 nectarine
1 teaspoon cinnamon
Save one peach to slice and layer on the tart crust. Place everything else in a high speed blender and blend until smooth. Pour the filling over the sliced peaches and crust. Serve and devour.
