What I Ate Wednesday: july 3, 2013

 This past week was extra special because I had my parents in town. I didn't make anything too special once they were here but the days leading up to the visit were filled with little goodies I wanted to share with them.

We spent most of our time outside so I ate a lot of fresh fruit and veggies ...

oh wait, that ain't new! 

We took them around town and let them sample the local cuisine at Palacios de los Jugos and then lots of samplings at the in-laws. They had so much fun and I had so much fun just being with them. I also had so much fun sharing my treats with them. Because who can turn down an epic Coconut Cream Cake with Chocolate Frosting ??
























Apricot Peach Tart. Completely fat free and completely delicious. No guilt involved with this indulgence. The crust is simply dried figs (which I've been loving, by the way) and the filling is simply apricots, peaches, dates and cinnamon. This 801010 dish is inspired by Fully Raw Kristina




Coconut Cream Cake with Chocolate Frosting. It's as deliciously epic as it sounds. A brownie crust. A coconut cream center. Strawberries folded in. Decadent chocolate frosting. And tart, yet sweet, strawberries for garnish. Oh yes, they enjoyed this.

 

Salad. So simple. Florida avocados, strawberries, red onions, apple cider vinegar and a drizzle of olive oil. I added some fresh salsa and then devoured the entire thing. This is usually my eats at the in-laws and I'm not complainin'. It's so easy and approachable, too.



Tropical Fruit. What kind of WIAW would it be without fruit? This time I indulged in juicy mango and papaya with some lime juice. I was so happy to feed this to my parents. Where we come from tropical fruit is just not like this so it was quite a treat to be able to open up this world to them.


Coconut Lemon Custard. This really is simple and happened on a whim. The in-laws had some extra coconut meat (how is that ever possible??) and so they offered it to me, knowing I love the stuff. I blended it with some lemon juice, a banana, a little bit of maple syrup, and coconut butter. I poured this in a cup made up of ... you guessed it ... dried figs, and this amazing dish was born.



Beach. While we weren't eating we spent our time here. It was beautiful and perfect. It was such a rainy weekend, yet somehow the weather at the beach was always perfect when we headed out to it.


I love that I can share this life with the people I love and that it is easy enough to enjoy myself and my eats no matter where I'm at. I think another thing that helps is that the people I love also love me and they are very supportive and even curious about my lifestyle.
